# Expert Advice:

01 -
  • The Greek yogurt sauce somehow manages to be creamy and tangy without feeling heavy on a weeknight
  • It comes together in about 20 minutes but tastes like something you'd order at a restaurant that requires a reservation
02 -
  • The sauce will look quite thick when it first comes out of the blender, but the heat from the pasta and the natural pasta water will loosen it to the perfect consistency as you toss everything together
  • This pasta is actually better eaten slightly warm rather than piping hot, because the Greek yogurt can sometimes separate if it gets too hot too quickly
03 -
  • If you don't have a blender, you can finely mince the cilantro and garlic and whisk everything together by hand, though the sauce won't be quite as smooth
  • Rotini catches the sauce beautifully, but penne, fusilli, or even farfalle will work just fine if that's what you have in your pantry
