# What You Need:

→ Rice Pudding

01 - 0.5 cup Arborio or short-grain rice
02 - 2 cups canned full-fat coconut milk
03 - 1 cup whole milk or plant-based alternative
04 - 0.33 cup granulated sugar
05 - 0.25 teaspoon fine sea salt
06 - 1 teaspoon vanilla extract

→ Mango Layer

07 - 2 medium ripe mangoes, peeled and diced (approximately 2 cups)
08 - 2 tablespoons honey or maple syrup
09 - 1 tablespoon fresh lime juice

# Directions:

01 - Combine rice, coconut milk, whole milk, sugar, and salt in a medium saucepan. Bring to a gentle simmer over medium heat, stirring frequently.
02 - Reduce heat to low and simmer uncovered for 25 to 30 minutes, stirring often until rice is tender and mixture becomes creamy. Remove from heat.
03 - Stir in vanilla extract. Allow the pudding to cool completely to room temperature.

05 - Pour half of the mango purée evenly into popsicle molds. Spoon cooled rice pudding over the mango layer without overfilling. Top each mold with remaining mango purée.
06 - Insert popsicle sticks and freeze for a minimum of 4 hours until solid.
07 - To release, briefly dip molds in warm water and gently remove the popsicles.
