06 - 1 cup heavy cream

08 - 12 oz short pasta (penne, rigatoni, or fusilli)

14 - ½ cup grated Parmesan, plus extra for serving
# Directions:
01 - In a large heavy-bottomed pot or Dutch oven, cook the sausage over medium heat, breaking it up with a spoon, until browned and thoroughly cooked, about 5 minutes. Remove excess fat, leaving approximately 1 tablespoon.
02 - Add the chopped onion and cook until softened, about 3 minutes. Stir in minced garlic and cook for an additional minute.
03 - Stir in pumpkin puree, chicken broth, heavy cream, dried sage, dried thyme, ground nutmeg, salt, black pepper, and red pepper flakes if desired, mixing thoroughly.
04 - Incorporate uncooked pasta, stirring to ensure it is mostly submerged in the liquid.
05 - Bring to a gentle boil, then reduce heat to medium-low. Cover and simmer for 12 to 14 minutes, stirring occasionally, until pasta is al dente and sauce thickens. Add a splash more broth if necessary.
06 - Stir in baby spinach until wilted if using. Fold in grated Parmesan until melted and sauce is creamy.
07 - Taste and adjust seasoning as needed. Serve immediately, garnished with extra Parmesan and fresh herbs if desired.
