04 - 1/2 teaspoon vanilla extract

# Directions:

01 - Line a 9x9-inch baking pan with parchment paper and lightly grease it.
02 - Divide the marshmallows and butter into three equal portions (approximately 3 1/3 cups marshmallows and 1 tablespoon butter for each color layer).
03 - In a large saucepan, melt 1 tablespoon butter over low heat. Add 3 1/3 cups marshmallows and stir until fully melted. Stir in red gel food coloring until desired shade is reached. Add 2 cups Rice Krispies and mix until evenly coated. Press evenly into the bottom of the prepared pan.
04 - Wipe the saucepan clean and melt 1 tablespoon butter over low heat. Add 3 1/3 cups marshmallows and stir until melted. Stir in vanilla extract. Add 2 cups Rice Krispies and mix until coated. Gently press over the red layer.
05 - Wipe the saucepan clean and melt remaining 1 tablespoon butter over low heat. Add remaining marshmallows and stir until melted. Stir in blue gel food coloring. Add remaining 2 cups Rice Krispies and mix until coated. Gently press over the white layer.
06 - Sprinkle the top with red, white, and blue sprinkles while the mixture is still slightly warm.
07 - Allow treats to cool and set for at least 1 hour. Lift from the pan using the parchment paper, slice into squares, and serve.

# Expert Advice:

01 -
  • The gel food coloring stays vibrant without making your mixture soggy like those times you accidentally grabbed the liquid stuff.
  • Pressing each layer feels meditative, like you're actually building something instead of just throwing ingredients together.
  • Watching people's faces light up when they see the patriotic stripes never gets old, no matter how simple it is to make.
02 -
  • Gel food coloring is absolutely essential—I used liquid once and the mixture became so wet that the cereal couldn't hold its shape no matter how hard I pressed.
  • Low heat is your friend; marshmallows can scorch in seconds on medium heat, turning grainy and bitter instead of silky and sweet.
03 -
  • Lightly greasing your hands or spatula with butter, not oil, prevents sticking while still giving you a cleaner finish than you'd get trying to work bare-handed.
  • Low heat melts marshmallows perfectly—they become glossy and smooth rather than grainy, which makes the difference between treats that hold together and ones that crumble.
